Champagne Cocktail
Sugar cube
1/2 oz Cognac
Angostura Bitters
Sparkling Wine
Orange Zest

Chill champagne flute. Add Bitters to sugar cube is champagne flute. Pour in cognac and sparkling wine. Use bar spoon to crush sugar and release some flavour into the wine. Garnish with twist.

French 75
1/2 oz Gin
1/2 lemon juice
1/2 simple syrup
Sparkling Wine
Lemon Twist

Chill champagne coupe. Add gin, lemon and simple to champagne coupe. Pour in sparkling wine. Garnish with twist.

Kir Royale
Sparkling Wine
Float Dash of Cassis

Chill champagne flute. Pour in sparkling wine and dash in Cassis to create layered presentation.
