Lobster Rolls
Chop Steakhouse

8 oz                        Lobster Meat (approx. 2 x 1 ½ lb lobsters, ask your local fishmonger)

½ cup                    Full Fat Mayonnaise
½ tsp                     Cajun Spice
1 tsp                      Fresh Tarragon, finely chopped
½ ea                       Lemon, juice and zest
1 oz                        Celery, small dice
1 oz                        Green Onion, thinly sliced
TT                           Kosher Salt, Fresh Black Pepper

4 ea                        Brioche Hot Dog Buns (or 12 mini rolls)
4 Tbsp                   Garlic Butter, whipped

Garnish                Half grape tomatoes, arugula, lemons

  1. Shell lobsters and dice all the meat into good sized chunks, roughly ½”. Keep chilled.
  2. In a mixing bowl, whisk together mayo, Cajun spice, tarragon and lemon juice.
  3. Fold in diced lobster, celery and green onion. Season with kosher salt and fresh black pepper.
  4. Butter both sides of each bun generously with garlic butter and toast on both sides until golden brown
  5. Share the lobster filling amongst all of the buns, so that it sits nice and tall.
  6. Garnish with grape tomato halves and fresh arugula as desired.
  7. Serve with fresh lemon wedges and your favorite backyard patio side dish: potato salad, corn on the cob, or salt ‘n vinegar potato chips!
