8:20am Baking Without Dairy! Lactose intolerant or just watching your dairy intake but love a great white sauce or rice pudding?  Chef Julian Bond shows us how to make them without milk or cream!


Almond Breeze, Black Currant & Coconut Rice Pudding
3 cups              Almond Breeze (vanilla)
¾ cup              Short grain rice
1/3 cup           Dried black currants
3 tbsp              Grated lemon skin
1 ½ tbsp          Vanilla extract
3 tbsp              Toasted coconut
2/3 cup           Sugar
Cinnamon to taste
Pinch of salt

In a medium sauce pan combine Almond Breeze, lemon and vanilla.  Bring to a simmer and add rice.

Stir uncovered for 15 minutes.  Add currants, coconut and sugar and continue to cook for 15 minutes.  Remove from heat and add cinnamon.  Serve warm or chill overnight and serve cold.

Baked Gnocchi, Arugula & Almond Breeze Herbed Brown Butter Sauce with Cherry Tomatoes
1pkg                Gnocchi
1 cup               Arugula
1 cup               Almond Breeze
½ cup Cherry tomatoes
1 head              Garlic clove (oven roasted)
2                      Shallots (oven roasted)
1 tbsp              Unsalted butter
2 sprigs           Sage leaves
1 tbsp              Olive oil
1/2 cup           Parmesan cheese
1 tsp                Freshly grated nutmeg
Chili flakes (optional)
Salt & pepper to taste

Preheat oven to 350F.

Cut the tops off the garlic and shallots.  Drizzle with olive oil and salt.  Wrap in tin foil and bake for 25 minutes.

In a saute pan melt butter, add roasted garlic and shallots.  Stir in Almond Breeze, sage leaves, arugula, parmesan cheese, nutmeg and chilli flakes.  Stir in halved cherry tomatoes.  Salt & pepper to taste.

Bring to boil a medium pot of salted water.  Add  gnocchi and stir for 2 minutes.  Drain and combine with Almond Breeze, garlic and shallots.  Sprinkle with parmesan cheese and bake for 30 minutes.
