How To Make The Perfect Duck Egg Omelette

Duck French Omelet

Makes 1 omelet 

2 whole duck eggs

1 tsp water

1-2 tsp unsalted butter


Use room temperature eggs.

Whisk with a fork without incorporating air into the eggs. 


Heat a nonstick pan and add 1-2 tsp unsalted butter over medium high heat. 


Once the butter foams pour in the egg mixture and  gently stir the eggs around the pan. Stir and shake the pan, moving the eggs though each other with out getting any colour on the bottom. Once the eggs are 80% firm allow them to sit an form a solid crepe in the pan. Hold the pan at a 45º angle and let the omelet roll into itself in the pan.  Turn the omelet out of the pan on to a warmed plate. Shape the omelet into a torpedo tube. Season with sea salt and butter.


Chia Jam

 4 cups fruit, cut into 1 cm slices

4 Tbsp chia seeds

4 Tbsp honey

2 Tbsp lemon juice


Place the fruit, lemon juice and honey in a bowl and mix together. Allow to stand for 20 minutes to extract water from the fruit. 

Place in a saucepan and gently heat the fruit over low heat until it just simmers . Remove from the heat and stir in the chia seeds. 


Store in the refrigerator for up to two weeks or freeze
