7:20am -Vikram Vij’s Foods Fuel Trans-Pacific Swimmer:  Long distance swimmer Ben Lecomte is taking on a huge challenge this winter;  he will swim the Pacific Ocean from Tokyo to San Francisco.   His 8,851 kilometre journey will be fueled by foods created by Vikram Vij.  They both join us on the boat that Ben will call home for his journey and learn more about the food Vikram Vij will prepare.

8:40am Blackened Catfish with Braised Greens and Black Eyed Peas: We pay a gastronomic visit to Kansas when Executive Chef Tobias Grignon shows us how to make  Blackened Catfish with Braised Greens and Black Eyed Peas, one of his upcoming Taste of the States Longtable Dinners.


Chef Tobias Grignon

Serves 4

2 lb cleaned catfish fillet (substitute a local rockfish if necessary)
8 Tbsp flour
2 Tbsp paprika
1 Tbsp dried oregano
1 tsp garlic powder
1/2 tsp cayenne
150 ml oil for frying

Braised Greens
2 lbs of stewing greens (kale, chard, turnip tops)
1/2 onion diced
1 clove garlic chopped
5 strips of chopped bacon
1 cup chicken stock
Hot sauce (Louisiana or similar style) to taste
1 cup of cooked black eyed peas

Remoulade Sauce
1/2 cup mayonnaise
1 Tbsp ketchup
2 dashes Tabasco sauce
1 Tbsp whole grain mustard
1 Tbsp chopped fresh parsley
1 tsp lemon juice
1 pinch cayenne pepper


Braised Greens

  1. Place a large pot of water, heavily salted, on stove at high heat and bring to a boil
  2. Prepare an ice bath (in a large bowl or container) for the greens
  3. When the pot of water comes to a boil, place the greens in the water for about 90 seconds
  4. Remove greens from pot and place directly into ice bath
  5. Squeeze out any excess water from greens
  6. Coarsely chop the greens and set aside
  7. Gently fry the chopped bacon in a pan at medium heat for 3 to 5 minutes
  8. Add diced onions and chopped garlic, let sauté for about 5 minutes
  9. Add chicken stock and reduce to create a glaze
  10. Add greens and cooked black eyed peas and continue to reduce glaze onto the greens
  11. Season with hot sauce to taste


  1. Combine flour and all spices in a medium to large bowl
  2. Season the catfish with salt
  3. Lightly place the catfish and tap into the flour and spice mixture
  4. Place into a medium pan on high heat with oil
  5. Fry until the flour and spice mixture take a dark brown hue at 3 to 5 minutes per side
  6. Remove from pan and place on paper towel to soak up any excess oil before serving

Remoulade Sauce

  1. Place all ingredients in a small bowl
  2. Mix together until fully combined


To Serve

  1. Place braised greens on the bottom of a serving platter or dish
  2. Place catfish on top of braised greens
  3. Dress the top with remoulade sauce
  4. Serve
