Catch 122’s Ricotta Cheese

4 litre Whole Milk
1/2 cup Water
1 tbsp Lemon Juice
1 tsp Salt
1 tsp Citric Acid

1. Heat milk in a pot until it reaches 200F.
2. Mix water, lemon juice, salt and citric acid in a bowl.
3. Once milk reaches 200F, stir in liquid mix.
4. Remove from heat, let stand of 10 minutes.
5. Strain through cheese cloth.
6. Let cool and serve.
