Jon’s Super Bowl Spin Dip

3 tbsp butter
2 shallots, diced
2 cloves garlic, minced
½ cup onion, diced
½ lb ground pork or pork sausage
½ lb ground beef
1 lb chicken breasts, cut into small cubes
1 8 oz pack cream cheese
1 cup mascarpone cheese
½ cup mayonnaise
1/3 cup sour cream
¼ cup Parmesan cheese grated
1 10ozpack frozen spinach, thawed, strained, and chopped
1 cup jarred artichoke hearts, drained, chopped finely
½ cup sundried tomatoes in oil, drained, chopped finely (optional)
Salt and pepper, to taste
Crushed red pepper flakes, to taste
1 tbsp Worcestershire sauce
1 tbsp lemon juice
1 cup provolone cheese, shredded

Garnish:
1 bunch chives, sliced thinly
Smoked paprika or cayenne pepper for presentation

Dipping suggestions:
Pita chips
Tortilla chips
Bacon strips
Sliced baguette
Celery
Romaine hearts
Corn Chips

Method:

Preheat oven to 375 F or prepare crock pot for dip.

In a large frying pan over medium-high heat, cook chicken cubes in 1 tbsp butter until cooked through. Seasoning the chicken with salt and pepper as it is cooking. Set aside chicken in casserole dish or crock pot.

In same pan over medium-high heat add remaining butter and melt. Add ground meats to pan and cook until browned slightly. Add onion, shallots and garlic and cook through until soft. Add spinach, artichokes and sundried tomatoes and cook until just warmed through. Lay contents of pan into same casserole dish or crock pot as the cooked chicken.

In same pan on low heat, add sour cream, mascarpone, mayonnaise, Parmesan and cream cheese. Cook until softened and combined. Add red pepper flakes, Worcestershire sauce and lemon juice.

Add mixture to ingredients in casserole dish (or crock pot) and combine. Season with salt and pepper. Add half of shredded provolone and combine once again. Top with remaining provolone and bake until cheese is fully melted and dip has warmed through. Alternately, heat all ingredients in crock pot until cheese on top has melted.

After cheese is melted, sprinkle with chives and smoked paprika or cayenne.
